Boulder Colorado is a gorgeous little town! You get an amazing view of the Rocky Mountains, especially when they are covered in snow. I ended up going to boulder to eat at a cafe called Snooze cafe. The join is known for their weird pancakes, and the pancakes were truly delicious. I had a normal pancake, a peanut butter cup pancake and a sweet potato pancake. The normal pancake was amazing, the peanut butter cup pancake was phenomenal and the sweet potato one blew my mind. I originally thought the sweet potato one was going to be horrible, but it turned out to be the best one. I couldn't imagine how good these would have tasted before. I totally recommend it to anyone.
